Broccoli Stir Fry

I want to include broccoli in my daily cooking because of its health benefit and nutritional supplement.Broccoli is rich in vitamin c helps to absorb iron,folic acid ,potassium.It  has high fiber content also.


Ingredients:
Broccoli-1 bunch
Boiled chicken peas-1 cup
Onion-1 medium size(finely chopped)
Green chilli-3 nos
Curry leaves-few
Grated coconut-2 tsp(optional)
Salt-as per need
Oil-1 tsp
Tempering:
Mustard seeds-1 tsp
Urad dhal-1/2 tsp
Chana dhal-1/2 tsp
Method:
* Wash and cut the Broccoli.
*Heat oil in a pan, add the tempering ingredients,let it splutter.
*Add the onion saute it until golden brown,then add cut green chillies and curry leaves.
*Add broccoli,cook by sprinkle water until its soft.
*Add boiled chana dhal saute it for few mins.
*Finally if u want garnish with grated coconut.
It goes well with sambhar ,rasam rice even with rotis also.
To boil chana dhal ,soak it for 7-8 hours or over night and cook it in a pressure cooker for 6-7 whistles.You boil it in advance and store in freezer even for a month.

Its very interesting ,sure  kids can love it.They can learn the tools  safety also.

Pepper Jeera Rasam (Milagu Rasam)

Pepper Jeera Rasam,Milagu Rasam  in Tamil  is one of the best home remedy for cold,sore throat.Have it with rice or like  it as soup heals sore throat ,helps to relieve from cold.






Ingredients:


Water -11/2 cup
Red Chillies-3-4 nos.
Cumin(Jeera)-1 tsp
Pepper-1/2 tsp
garlic pods-4-5
Tamarind-small ball size
Salt-as per needed
Curry leaves and Coarinder leaves for garnish




Method:
* Grind red chillies,cumin,pepper,garlic pods into a coarse paste.
*Extract pulp from the tamarind.
*In a pot add the ground paste, tamarind,water and salt, let it boil .
*When it starts boil add curry leaves and coarinder leaves then switch off the stove.


The spicy milagu rasam is ready to serve.



Have it with hot steammed rice.The best combination is rasam saddam with thengai thogayyal.It can be served as soup also.Adjust red chillies and tamarind according to ur taste.

Mushroom Pepper Fry

Mushroom has lot of health benefits.Mushrooms are fat free food help to lose weight.It has less nutritional value but rich in vitamins and minerals.It boost immune system and reduce bad cholesterol.




Ingredient:
Mushroom-1/4 kg
Oni0n-1 medium size finely chopped
Pepper powder-1 tsp
Salt-as needed
Oil-1 tsp


Method:






 * Wash and cut the mushroom into thin slices.











*Heat oil in a pan,add onions saute it until golden brown.
*Add salt and mushroom slices saute it.The mushroom itself leaves  water so don't add any water.When water dries add pepper powder and saute it for few minutes.


Its a nice side dish for sambhar saddam or even have it as.

Mango Pops

For the hot summer kids need something cold.The mango pops is here.Pour the mango juice in the mould and insert ice cream stick to it.Freeze it for 2 to 3 hours.Your mango pops are ready.

If u dont have the mould ,no problem do it like this.Pour the juice in a stainless steel tumbler and insert ice cream stick or skewer.Freeze it for 2 to 3 hours ur mango pop is ready.










Note
* When the pops are ready take it out and put it in a bowl of water for few minutes.Its easy to remove from the tumbler



Mango Pop is ready.Sure the kids can enjoy it.We are happy that kids have natural thing without any artificial flavour and preservatives.

MuskMelon(Cantaloupe) Milk Shake-Mulam pazham Juice

Summer is here.So lot of refreshing drinks to quench the thirst.One of  my favorite summer drink.
Mulam pazham in tamil ,Cantaloupe(Musk Melon) milk shake.It tastes delicious.

Ingredients



Remove the skin and roughly chopped Cantaloupe -11/2 cups

Chilled Milk-3/4 cup

Sugar -3 tsp

Method
*Blend all the ingredients in a blender or mixie.strain in a metal strainer.Now its ready to serve with ice cubes.




Tips:
*U can scoop the fruit instead of removing the skin .
*Add little water .
*If u like thick juice no need to strain , have it as .
* U can use any sweetener of ur choice honey,sugar,datesyrup.
*Adjust sugar according to your taste and sweetness in the fruit.

Cabbage Stir Fry - Cabbage Poriyal


Ingredients:
Cabbage-2 cups(finely shredded)
Onion    -1 medium size(finely chopped)
Green Chilli-4
Oil-2 tsp
Coconut-1tbsp optional
Salt-as needed

Tempering:
Mustard seed-1 tsp
Chanadhal-2 tbsp
Curry leaves-few

Method:
* Heat oil in a pan, add mustard seeds, let it splutter.
*Add chanadhal fry until golden brown.
*Add onion,green chillies,curry leaves saute it.
*Add the shredded cabbage saute it ,until raw smell goes or its become soft,if u want sprinkle little water.
*Finally add the grated coconut.

Okra Stir Fry - Vendakkai Poriyal


Ingredient
Okra -1 pound
Onion-1(medium size,finely chopped)
Chilli powder -1 tsp
Oil-2 tsp
Salt - as needed


Tempering
Mustard seeds-1/2 tsp
channa dhal-1/2 tsp
Urad dhal-1 tsp


Method



*  Wash and wipe Okra. Cut it into thin slices.















* Heat oil in a pan add mustard seeds,channa dhal, urad dhal.Let it splutter.
* Saute the onions until golden brown.Add salt  to it.
* Add  cut okra, fry until it becomes soft or it won't stick,Add the chilli powder to it and cook for another 2 to 3 minutes.




Tips
* When u wipe  okra make it dry without any water,otherwise  it becomes soggy.
*Cook it in a medium or low flame it can be easily burnt.

Rava kesari - Semolina pudding

Instead of having usual kesari in same cups its little different give pleasing look especially kids love it.Have it as finger food with a tooth pick.

Mostly i try to put recipes with small Quantities.If u want u can try with large qty.





Ingredient
Sooji rava - 3/4 cup
water       -  2 1/4 cup 1:3 ratio
sugar        - 3/4 cup even 1/2 cup is enough if u want less sugar
Ghee        - 4tsp
oil            - 2 tsp
salt           -small pinch
cashew and raisn as per need
orange food color a pinch



Method
* Put a tsp of ghee in a pan, fry cashew and raisin till golden brown.
* Pour water in a vessel add food color let it boil.
* After frying the cashew, then add rava and fry until golden brown in the same pan.
* When the water boils pour it in rava, mix well  no lumps are formed.
* Add sugar and salt to it.
* At this time add oil and ghee mix it well.Oil is added to it then only it is not hard.

*After some time it seperates from the pan or the ghee oozes out its the right consistency.
* Grease the plate put the mixture and level it .
* let it cool down and cut it to diamond shape.
